Oven Temperature: 375˚F or low broil
Baking Time: 7-15 minutes
Makes: 6 tacos
6 medium-sized flour tortillas (whole wheat or regular)
1/2 lb. (or more) meat (ground beef, pork, chicken, or turkey; leftover meat or sandwich meat; it doesn’t matter!)
1 cup shredded cheese
2 cups veggies (cooked: onions, mushrooms, squash, zucchini, corn, peas, asparagus, or others; or raw: lettuce, spinach, diced tomatoes, or others)
Preheat oven to 375˚F or put the oven on low broil.
Prepare veggies (wash and cook them or just wash them if you are leaving them raw).
Cook and drain the meat or just take out meat (if already cooked).
Line one or two baking sheets with foil. Spread the tortillas out on the baking sheets.
Sprinkle a little cheese on half of each tortilla. Then put the veggies on the same half of the tortilla. Sprinlke more cheese on the veggies. Then put the meat on top of the veggies. Sprinkle the rest of the cheese on the meat. Now fold the tortillas in half.
Put the baking sheets in the oven for about 5-10 minutes or until the tortillas start to brown. Then flip the tortillas over. Bake for another 2-5 minutes until the tortillas are starting to brown.
Take the tacos out of the oven and cool for 1-2 minutes. Now serve. We like to cut the tacos in half for easy handling, but you don’t have to. Enjoy!
