Makes: 2 steaks
2 pieces of steak 3/4 in. thick
Steak Seasoning (optional)
Hickory Wood Chips (optional)
Soak 4 cups of wood chips in a quart of water for at least half an hour. (optional)
Preheat the grill to the high setting (it will take about 10 minutes.)
Add the wood chips to the grill (optional)
While the grill is preheating, prepare the steaks. Set the steaks on a plate; then spread 1/2 a tablespoon of olive oil on each steak. Sprinkle one teaspoon of salt on eah steak.
Then add steak seasoning. (optional)
When the grill is preheated, change the heat to the medium setting.
Then place the steaks on the grill about 35˚ counterclockwise to the grill, like the hour hand on a clock pointing to 10:00.
After 2 minutes, rotate the steaks 90˚ clockwise, like the hour hand on a clock pointing to 2:00.
Grill an additional 2 minutes, then flip the steaks over. Now repeat placing the steaks on the grill 35˚ counterclockwise to the grill.
Test the doneness of the steaks by feeling their toughness. Medium-rare: open fist, medium: closed fist, and well done: tight fist.
Grill an additional 2 minutes if you want the steaks to be medium or well done.
Grill 4 more minutes on the low heat setting with the grill lid closed for a smokey flavor (if you want the steaks to be well done.)
Turn off the grill and place the steaks on a plate. Leave them out at room temperature for 3 minutes to cool down.
Add steak seasoning on top. (optional)
Cut the steak into thin slices. Enjoy!
